Cake Baking Tips - Preparing Your Oven

One of the keys to baking a quality cake is having a properly prepped oven. Even the best tasting cake batter can be ruined by an over that is set incorrectly. The following simple steps can help you bake a delicious cake to perfection.

Preheat. Allow plenty of time for your oven to heat before starting to bake your cake. Generally 10-15 minutes is enough time for an oven to reach baking temperature. Follow the recommended temperature listed for your specific recipe.

Double Check the Temperature. An oven may be heated to a different temperature than what the setting indicates and sometimes be off by as much as 75 degrees F. Buy an oven thermometer and check it prior to using the oven to make sure that it has reached the proper temperature.

Adjust Oven Rack. Position your oven rack as close to the center of the oven as possible, and place the baking pan in the center of the rack to help ensure even baking throughout the cake.

Use a Shiny Baking Pan. Metal pans reflect heat and so are best for oven baking. This prevents the cake from baking unevenly, which could lead to burned edges and an underdone center. If you decide to use glass instead, decrease the recommended baking temperature by 25 degrees F.

Check Before Removing. Check to see if your cake is done before taking it out of the oven. Insert a wooden toothpick (a piece of raw spaghetti works well too) into the center of the cake and make sure it comes out clean. Another indicator that your cake is done is that the sides of the cake should have shrunk away from the sides of the baking pan.

Homemade Acne Treatments - Baking Soda Will Cure Your Acne

History of Baking

Baking has been many cultures' favorite technique for creating snacks, desserts, and accompaniments to meals for many years. Now, it is very well-known as the method for creating sweets and all sorts of wondrous mouthwatering pastries. In ancient history, the first evidence of baking occurred when humans took wild grass grains, soaked it in water, and mixed everything together, mashing it into a kind of broth-like paste. Then, the paste was cooked by pouring it onto a flat, hot rock, resulting in a bread-like substance. Later, this paste was roasted on hot embers, which made bread-making easier, as it could now be made anytime fire was created. Around 2500 B.C., records show that the Egyptians already had bread, and may have actually learned the process from the Babylonians. The Greek Aristophanes, around 400 B.C., also recorded information that showed that tortes with patterns and honey flans existed in Greek cuisine. Dispyrus was also created by the Greeks around that time and widely popular; was a donut-like bread made from flour and honey and shaped in a ring; soaked in wine, it was eaten when hot.

In the Roman Empire, baking flourished widely. In about 300 B.C., the pastry cook became an occupation for Romans (known as the pastillarium). This became a very highly respected profession because pastries were considered decadent, and Romans loved festivity and celebration. Thus, pastries were often cooked especially for large banquets, and any pastry cook who could invent new types of tasty treats, unseen at any other banquet, was highly prized. Around 1 A.D., there were more than three hundred pastry chefs in Rome alone, and Cato wrote about how they created all sorts of diverse foods, and flourished because of those foods. Cato speaks of an enormous amount of breads; included amongst these are the libum (sacrificial cakes made with flour), placenta (groats and cress), spira (our modern day flour pretzels), scibilata (tortes), savaillum (sweet cake), and globus apherica (fritters). A great selection of these, with many different variations, different ingredients, and varied patterns, were often found at banquets and dining halls. To bake bread, the Romans used an oven with its own chimney and had grain mills to grind grain into flour.

Eventually, because of Rome, the art of baking became widely known throughout Europe, and eventually spread to the eastern parts of Asia. Bakers often baked goods at home and then sold them in the streets-children loved their goods. In London, pastry chef sold their goods in handcarts, which were very convenient shops on wheels. This way, they developed a system of "delivery" baked goods to people's households, and the demand for baked goods increased greatly as a result. Finally, in Paris, the first open-air café of baked goods was developed, and baking became an established art throughout the entire world.

Amazing Discovery - Baking Soda Cures Cancer

My stepfather and uncle died of cancer. My best friend also died of cancer. I have lots of reasons not to like cancer so I made up my mind to look for alternatives, to help others who may be in a bad way from cancer to find a solution.

You too may be looking for answers. Cancer is a devastating disease that not only kills its victims, but also tears apart their friends and loved ones. The frustration dealing with doctors who give you little hope and treatments that are often worse than the disease itself is almost too much to take.

What Causes Cancer?

Cancer is the mystery disease. Billions have been spent to try to find a cure, yet you never hear anyone clearly specify what causes it. But recently, I have been hearing more and more about those that are living and beating cancer everyday. And the one thing I have learned through my research is that you have to beat cancer "everyday", because there really is no quick fix.

Two doctors who I think may have answers is Dr. Timothy Brantley and Dr Tullio Simoncini.

Dr. Brantley is a popular naturopathic herb doctor that I first saw on Rachael Ray show and later the Montel Williams show who teaches people that "You Are The Cause and You Are The Cure". In his book titled "The Cure Heal Your Body, Save Your Life" lays out the fundamentals on how he helped several people cure themselves of cancer by balancing their internal systems using a proper diet and aggressive detoxification. This process saved hundreds of his patients suffering numerous ailments. And he has helped celebrities like Sylvester Stallone, Kelsey Grammar and other famous people with their health issues.

The keys to balancing your system as established through Dr. Brantley's book is to remove the toxins that are trapped in your body and simultaneously stop adding more toxins. These toxins are made up of free radicals that wreak havoc on your body. Dr. Brantley says that all of the answers are in nature and if you focus on feeding your body foods from the earth then you can cure yourself of almost any disease. In addition, he offers herbal formulas that can help to remove years of built-up of toxins trapped in the vital organs of your body. And he writes that Cancer cannot live in a balanced body and I have seen his patients on the Montel William show who have claimed that they are now cancer free because of what Dr. Brantley has taught them.

On the other side of the spectrum is Dr. T. Simoncini a trained Medical Doctor specializing in Oncology (a cancer specialist). He is confident that Cancer is a fungus that can be treated and cured. The most surprising fact is that the treatment is using sodium bicarbonate a substance we know better as baking soda. Yes, I said baking soda like the one Arm N Hammer produces. Through his practice in Rome, Italy, Dr. Simoncini uses sodium bicarbonate directly where the tumor resides in the body. He hypothesized that tumors shared many of the same properties of a fungus; and since sodium bicarbonate was known to be a quick and powerful weapon capable of eliminating fungus he might be able to use it to combat the tumor. And it did as Dr. Simoncini explains "I thought that if I could administer high concentrations orally or intravenously I might be able to obtain the same result. So I started my tests and my experiments, which provided me immediately with tangible results."

These discoveries lead to equally burning questions that need to be asked: If something as simple as baking soda can reduce and eliminate tumors and changing your diet can eliminate and reduce cancer and tumors, why has the medical community not mobilized around these solutions? And why are we not shouting and lauding these discoveries in major forums where cancer is discussed?

The answer to these questions are not clear. Although you do not need to look far as who benefits from Cancer being treated in its current prescribed manner. Don't let anyone tell you anything different. Pharmaceutical companies, MRI companies, doctors and hospitals would be crippled if all of these patients suddenly went away. Many doctors do not want to challenge these businesses who profit from cancer patients and in turn help fund the doctor's living.

If this is why these alternative cancer treatments have not been tested on a larger scale then it is a shame. However, you don't have to give up hope if you or a loved one has cancer. Ways To Clear Acne Using Baking Soda

As far as home remedy ways to clear acne, sodium bicarbonate, or baking soda as we typically call it, is by far my all time favorite. Baking soda has so many benefits to skin care and fighting acne that one can write an entire site upon it! First of all, the stuff is cheap! This day and age saving any kind of money is a good thing! Secondly, the grains are extremely small and are very smooth and round. This makes it an excellent exfoliate for getting out the fat and clearing clogged pores. Baking soda also does a great job at getting rid of the dead skin around acne and that gives bacteria a lot less to feed upon. Finally, sodium bicarbonate won't over dry your skin. While we want our skin to be dry and oil free it can't be too dry or else the body will work overtime to produce even more oil that we have to fight off.

The beauty of baking soda is there are several great ways to clear acne using it!

Sodium Bicarbonate as a Spray/Toner - Sprays or toners are used after washing your face as an added guard against acne. As with all natural remedies you are going to want to try this on a small part of your face for the first time to make double sure that you are not allergic to your toner. Begin by adding one to two tablespoons of baking soda to a standard spray bottle. Close and shake the bottle for a bit until you're sure the baking soda is completely dissolved. Wash and pat dry your face and then spritz a bit onto your face and allow it to dry. There's no need to wash it off and its invisible, however being self conscience as I am, I used this before I went to bed. I had no problems leaving it on all night.

Sodium Bicarbonate Face Mask - This not only helps unclog and exfoliate your skin, but it feels good too! Mix baking soda and a small amount of warm to hot water together until you get a nice thick paste and spread it evenly over your face. Leave it on for about twenty minutes after it completely dries and then wash and pat dry your face. Sodium bicarbonate facial mask have been used since baking soda has been popular and its price makes this one of my favorite mask solutions.

Sodium Bicarbonate as a Facial Cleanser - Using baking soda as a facial cleanser isn't much different than making the facial mask. This time you'll want to mix enough warm water and baking soda together until you get a facial cleaner like consistency and then proceed to use the mix on your face. Rub it in softly, and let the small texture of the mixture exfoliate your skin. After lightly rubbing and massaging your face for 2-3 minutes with the mixture, rinse and pat dry. Baking soda won't over dry your skin so further cleansing is not necessary.

Whether or not you use this method or any method, the most important thing to keep in mind is that you've got to stick to the plan. Most folks give up on treatment way too early thinking that because they don't see any improvement overnight that their problem isn't getting any better. With any acne treatment make sure you give it a good week or two before really looking into how effective your method of treatment is.

Using baking soda as a facial cleanser is great but using it with tree oil as a way to clear acne is even better!

2 eggs, beaten
3-4 bananas, mashed with a fork
1/4 cup butter, softened

1. Mix together the butter, sugar, eggs, and vanilla.
2. Add the mashed bananas and stir.
3. Next add the flour and salt to the mixture and stir until just mixed. Don't over-stir.
4. Grease 2 loaf pans and pour the batter evenly into both.
5. Bake at 350 degrees for approximately 45 minutes or until a toothpick inserted in the center comes out clean.

Don't Fear Baking - Making Cakes is Easy!

For many, the very thought of baking sends shivers down the spine. Yet a sponge cake is one of the easiest and most enjoyable recipes you can make. Whether you're making a very simple classic Victoria sponge or something more elaborate, you could go from making the cake to eating it in under 90 minutes!

I'm not really certain why cakes have a reputation for being daunting. In fact, cakes are what recipes were invented for. Follow the recipe and the cake will turn out perfect every time! There's no playing around, no adding your own 'little touches'. You read the recipe, buy the ingredients then prepare the cake according to the recipe and hey presto, you have a cake ready to eat.

Perhaps part of the problem lies in the variability of ovens. Everything else in a cake recipe follows a set pattern but ovens can differ from house to house and type to type. Many of the basic recipes we have today were written in the 1960s and 1970s and 1980s where fan-assisted ovens were rare. As a result, those trying those recipes in the new ovens found that no matter what they did, the cakes would almost always burn.

If you are following an old recipe and you do have a fan-assisted oven then turn the temperature of the oven down by 10°C lower than the temperature in the oven. Bake for the same amount of time as given in the recipe, but cover the top of the cake with kitchen foil for the last 10 minutes of cooking to prevent the cake from burning. Then you will get perfect results.

Remember also that when you can smell the cake cooking it's almost done. Even if the recipe says you have another 20 minutes to go always check the cake when you can smell it, as it may have cooked much faster than you thought.

Baking Traditions - What Happens to Lost Recipes

Do you having baking traditions in your family? Is there one thing that you always bake together during a holiday? Is there one recipe that has been handed down from generation to generation? Have you shared those traditions and recipes with anyone?

This is a subject that really hits home for me because I lost some of our family recipes recently. It made me think about what happens to a recipe if no one knows about it or cares about where it goes. Nothing happens to it. It is lost to the world and may never be found again. What a truly tragic end for a great recipe (especially a baking recipe!). A wonderful cookie, pie, or cake is never made again. I really love sweets so this truly brings a tear to my eye!

A recipe is a gift. A gift of love. A gift of time and effort. A gift that can keep on giving because each time you make it, you enjoy it again. It is not only a gift from the person who created the recipe but also a gift from the person who gave it to you. Treasure those gifts and share them. A recipe and story shared is worth more than one just sitting in your recipe box. Perhaps you are waiting for just the right person or time to share it. I have been guilty of that one myself. But a recipe that isn't shared is nothing but a piece of paper in box. It means nothing to anyone but you unless it is shared with someone else.

Write them down. Of course your recipes are already written down in some form or another. But what about the funny family story or family baking tradition that goes with it? Make sure that story gets written down too.

Make sure someone in your family knows that this recipe and this family baking tradition are important to you. Make sure that they know you want it to be passed on in the family. No one will know how important it is to you unless you tell them. (So speak up!)

And last but not least, your baking assignment (should you choose to accept it) is to share one of your baking recipes (and the story that goes with it) this week with someone. Baking Bread and Your Freezer

There's a lot of bread in our freezer. In our exuberance, we often bake more bread than we can eat in a day or two. What isn't given away goes in the freezer.

Sometimes, we bake bread just to store. It's wonderful to have homemade bread on hand for those periods when we're just too busy to bake. And it's always a good feeling to have bread on hand for an emergency.

Baking Tools

There are three ways to use bread from your freezer. Most commonly, the freezer is raided for that special bread (like Canadian Cheese Bread) for a sandwich or for fresh homemade bread for breakfast toast. To accommodate those raids, we keep lots of sliced bread in the freezer. A slice or two of bread is snapped from the frozen loaf and dropped in the toaster while the remaining loaf goes back to the freezer. As long as you don't mind toasted bread for your sandwich, an array of breads are available for breakfast or sandwiches. This way, each kid gets to choose the bread that he or she wants.

Bread can be removed from the freezer and allowed to thaw on the counter. Use it within a day or so just like you would fresh bread.

Frozen bread can also be reheated and recharged in the oven. Defrost the bread completely on the counter then reheat it in the oven for ten minutes at the same temperature at which it was baked.

The secret for quality bread from your freezer is starting with the freshest loaves possible. If you freeze the bread as soon as it is completely cooled, it will taste as if it came from the oven when thawed.

To freeze bread-sliced or unsliced-place it in a plastic bag with the excess air pressed out. For longer storage, cover the plastic bag with aluminum foil. Since air will slowly migrate through the walls of a plastic bag, plastic alone will work for only a month or two (heavier, freezer-type bags will help). If frozen in foil or freezer wrap, bread can be stored for three or four months and still maintain top quality. Mark all bread going into your freezer with the date and the type of bread to be sure that you can tell the difference between Old Wisconsin Cheddar Bread and Sour Cream Onion Bread.

Place the new loaves behind the loaves already in the freezer to help rotate stocks.

By the way, never refrigerate bread. Bread will stale faster in the refrigerator than on the counter.
